Crock Pot Honey Cajun Pork Tenderloin

Happy Mardi Gras y'all! To celebrate this super special and festive holiday, I cooked up this tasty Crock Pot Honey Cajun Pork Tenderloin. It's full of cajun spices, flavors, and love; the latter of which is a huge part of southern cooking. I should know. I'm a Texan. Another thing I know that Texas and New Orleans has in common is our love of all things spicy when it comes to our food. The more heat, the better.

Don't worry though, I kept this pork tenderloin on the more mild side while also being easily adjustable for those that crave a more in-depth heat. You know, the sort that makes you start to sweat and clears your sinus. I've got you all covered, from one end of the spectrum to the other.
I've lightened this whole thing up by using one of my new favorites (as if you couldn't tell by the nearly half empty bottle back there), Whole Earth Sweetener Honey 50. It's 50% fewer calories than traditional honey per serving, organic, and Non-GMO project verified. While you can use it with yogurt, tea, or fruit... you can also use it for traditional cooking just like I did here!

I served my Cajun Pork with some cheesy grits and plenty of wilted mixed greens, but whatever sides you decide on would be great. This spicy pork is just spicy enough to get the taste buds tingling without making you sweat. A little sweet. A little heat. Just right.

New Orleans will always have a special place in my heart. It's where my parents had their honeymoon. It's where I drove through with my grandfather, making memories, shortly after Katrina hit. That was way back when I was just a teenager, somewhere in high school or there shortly after. It's a place I've heard numerous stories about and can't wait to one day make even more memories there.

The Skinny:
Servings: 8 • Size: About 1 1/2 Cup • Calories: 359.9 • Fat: 14.3 g • Saturated Fat: 3.7 • Carb: 3.6 g • Fiber: 0.9 g • Protein: 50.9 g • Sugar: 2.3 g • Sodium: 417.3 mg

Ingredients:
Cajun Seasoning:
1 Tbsp Dried Oregano
1 Tbsp. Smoked Paprika
1 Tbsp. Red Chili Powder
1/2 Tbsp. Salt
1 Tsp. Ground Black Pepper

Tenderloin:
2 Tbsp. Whole Earth Sweetener Honey 50
1 C. Unsalted Chicken Broth
3 Lb. Pork Tenderloin
 

Directions:

In a small bowl, combine the 1 Tbsp Dried Oregano, 1 Tbsp. Smoked Paprika, 1 Tbsp. Red Chili Powder, 1 Tbsp. Ground Black Pepper and 1/2 Tbsp. Salt.

In the base of the slow cooker, add about 2 Tbsp. of the cajun seasoning blend along with 2 Tbsp. Whole Earth Sweetener Honey 50 and 1 C. Chicken Broth; whisk to combine.

Season the 3 Lbs. pork tenderloin in the remaining 2 Tbsp. of seasoning and heat a medium or large skillet over medium-high heat.

Sear the pork tenderloin on all sides and place it into the sauce mixture in the crock pot.

Secure the lid and cook for 4-6 hours on high or 6-8 hours on low.

Once done, remove the tenderloin from the crock pot and slice.

It should be so tender that it just falls apart.

BONUS TIP: Feel free to reduce and strain the sauce to use over the pork tenderloin for added flavor!
