It's hard to believe, but summer is coming, y'all! I should know too since my birthday falls on the first day of summer. As school is letting out and it's starting to get warmer and warmer out, I'm craving the good stuff. The cold stuff. The stuff that's going to chill me out in the dreaded Texas heat. Not only that, but I want something that's going to satisfy everyone's summer snack cravings. A little sweet. A little salty. And a whole lot of cold.

These Skinny Late Night Summer Snack Ice Cream Bites are a perfect fit. They cover the list of wants and needs with their variety of sweet, salty, crunchy and cold. There's seriously something for everyone in there and it's all good amazing stuff! I see these being great for late night summer snacking in their perfectly portioned 3-4 bites of ice cream heaven.

For these little beauties, I started out with an ice cream cake mix that I made with a lot less sugar and a fat free milk. I then added in some Snack Factory® Pretzel Crips® and Kettle Brand® Potato Chips for the salty and crunchy part of the snack. They are some of my favorite things to use for snacking before they are so versatile and allow me to be creative with each special bite! Plus, they're both made with simple and high quality ingredients. Of course, that wasn't all though. I loaded in plenty of dark chocolate chips to give the sweet cold ice cream just enough of a bitter chocolate bite.

What's better about these bites is that you can make them ahead and have them on hand to share the love of snacking with friends and family all summer long! They are perfectly keepable in the freezer to have ready to nosh on when one of those summer cravings strikes. They soothe those snack desires without leaving you feeling guilty at all!

After all, who doesn't love the perfect blend of sweet, salty, crunchy and cold? I know that I sure do. And you better believe that I will have plenty of these on hand as we roll over into the summer season.

The Skinny:
Servings: 24 • Size: 1 Prepared 'Bite' • Calories: 138.5 • Fat: 10.4 g • Saturated Fat: 6.4 • Carb: 10.6 g • Fiber: 0.5 g • Protein: 1 g • Sugar: 7.2 g • Sodium: 47.6 mg

Ingredients:
1 Pkg. Ice Cream Cake Mix (I used the same one from here.)
2 1/4 C. Heavy Whipping Cream
1 1/8 C. Reduced Fat Milk
1/4 C. Sugar
1/4 C. Natural Sweetener
1 C. Snack Factory® Pretzel Crisps®, Slightly Broken/Crushed
1 C. Kettle Brand® Potato Chips, Slightly Broken/Crushed
1/2 C. Dark Chocolate Chips

Directions:
Line a cupcake pan with paper cupcake liners; set aside.

Whisk together the packet of Ice Cream Cake Mix, 2 1/4 C. Heavy Whipping Cream, 1 1/8 C. Reduced Fat Milk, 1/4 C. Sugar, 1/4 C. Natural Sweetener for 3-5 minutes on medium speed.

Add in the 1 C. Snack Factory® Pretzel Crips®, 1 C. Kettle Brand® Potato Chips, and 1/2 C. Dark Chocolate Chips until it's all well blended.

Scoop about 1/4 C. of the ice cream mix into each section.

Top with a half of a Snack Factory® Pretzel Crisp, a Kettle Brand Potato Chip, and a few more chocolate chips.

Place the pan into the freezer for 2-6 hours.

Once done, remove them from the pan and serve right away or store in an air-tight container in the freezer until ready to eat.
