Caprese Toast is a delightful twist on the classic Caprese salad, featuring juicy tomatoes, fresh basil, creamy cottage cheese, and a drizzle of balsamic glaze, all piled high on crispy toast. This vibrant and flavorful dish is perfect for a quick and satisfying breakfast, brunch, or snack.

With its simple yet delicious combination of ingredients, Caprese Toast is sure to become a favorite go-to recipe for busy mornings or lazy weekends. Give this healthy and mouthwatering dish a try and elevate your toast game to a whole new level!

There isn’t much to do to lighten this up outside of some low fat cottage cheese. The rest of ingredients are pretty simple and standard. You get a good mixture of cool and creamy, bright, and bold flavors here with this Caprese Toast. I chose a sourdough bread that didn’t come pre-sliced because I wanted to be able to get a good thick slice that could hold all the toppings!

This toast makes a great meal no matter what time of day it is. Breakfast, brunch, lunch, or even a light dinner option.

Caprese Toast is a delightful twist on the classic Caprese salad, featuring juicy tomatoes, fresh basil, creamy cottage cheese, and a drizzle of balsamic glaze, all piled high on crispy toast.

Ingredients

  • 1 Slice Sourdough Bread
  • 1/4 C. Low Fat Cottage Cheese
  • 5-6 Cherry/Grape Tomatoes, Halved
  • 2-3 Fresh Basil Leaves, Sliced
  • Drizzle Balsamic Reduction

Instructions

  1. Toast the 1 Slice Sourdough Bread.
  2. Top it with 1/4 C. Low Fat Cottage Cheese spread evenly.
  3. Add the 5-6 Cherry/Grape Tomatoes and 2-3 Fresh Basil Leaves over the Low Fat Cottage Cheese.
  4. Drizzle with the Balsamic Reduction and enjoy right away!
