This Elote Dip is a delicious and flavorful appetizer inspired by the classic Mexican street corn dish, Elote. This creamy dip features the traditional ingredients of corn, seasonings, and cheese, combined with a kick of hot sauce and a squeeze of lime juice.

Perfect for sharing at parties or gatherings, Elote Dip is a crowd-pleaser that will have everyone coming back for more. Serve with tortilla chips or veggie sticks for a tasty and satisfying snack that is sure to impress your guests. I served mine with some special ‘Elote’ corn chip dippers and an extra garnish of more hot sauce, cotija cheese, and cilantro!

I kept this dip lightened up by swapping in greek yogurt in place of sour cream. I also used a reduced fat cream cheese in place of regular cream cheese. I promise, no one will notice the subtle swaps!

You can serve this with tortilla chips, corn chips, or even some fresh veggies perfect for scooping.

This Elote Dip is a delicious and flavorful appetizer inspired by the classic Mexican street corn dish, Elote. This creamy dip features the traditional ingredients of corn, seasonings, and cheese, combined with a kick of hot sauce and a squeeze of lime juice.

Ingredients

  • 1 (15 Oz.) Can 'No Salt Added' Corn, Drained
  • 8 Oz. Reduced Fat Cream Cheese
  • 1 C. Shredded Jack Cheese
  • 2 Oz. Cotija Cheese
  • 1/4 C. Plain Fat Free Greek Yogurt
  • 1 Jalapeno, Diced
  • 1 Tbsp. Minced Red Onion
  • 1 Tbsp. Frank's Hot Sauce
  • 1 Tbsp. Fresh Lime Juice
  • 1 Tbsp. Elote Seasoning or Taco Seasoning
  • 1 Garlic Clove, Minced
  • 1/4 C. Chopped Cilantro

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Mix together the 1 Can Corn, 8 Oz. Reduced Fat Cream Cheese, 1 C. Shredded Jack Cheese, 2 Oz. Cotija Cheese, 1/4 C. Plain Fat Free Greek Yogurt, 1 Jalapeno, 1 Tbsp. Minced Red Onion, 1 Tbsp. Frank's Hot Sauce, 1 Tbsp. Fresh Lime Juice, and 1 Garlic Clove in a bowl together.
  3. Transfer the mixture to an oven safe bowl.
  4. Cover with foil and place in the oven to bake for 20-30 minute.
  5. Remove the foil and continue to bake for about another 10 minutes.
  6. Once done, remove from the oven and sprinkle with the 1/4 C. chopped Cilantro. Serve right away with your favorite dippers!
