Cookies just don’t get more simple than this. Not only is this Oatmeal Raisin Skillet Cookie baked in a skillet, it’s whipped up all in one bowl. That means a whole lot less dirty dishes to deal with, and a whole lot more time to spend enjoying this delicious cookie. And let’s face it, saving time and energy at the end of the school year is VITAL.

This oatmeal cookie has all the goodness of any oatmeal cookie, and none of the guilt. I mean, how can you feel guilty about eating oatmeal and raisins?

This cookie is lightened up by first swapping out 2/3 of the sugar for natural sweeteners and blends. Any sort that measures cup for cup like sugar that you like will work here. And of course, being an oatmeal raisin cookie means that it’s loaded up with plenty of oatmeal and raisins.

Originally I had started cutting the cookie up, but then on second thought I scooped ice cream on top of the warm fresh baked goodness and just started to eat it with a spoon. No regrets.

A giant oatmeal raisin cookie that's baked up in a skillet. Crisp on the edges and ooey-gooey in the middle. Perfect to serve with a scoop of vanilla ice cream!

Ingredients

  • 6 Tbsp. Butter, Softened
  • 1/4 C. Brown Sugar/Sweetener Blend
  • 1/4 C. Natural Sweetener
  • 1/4 C. Sugar
  • 1 Whole Large Egg
  • 2 Tsp. Vanilla
  • 1 C. Flour
  • 1/2 C. Oats
  • 1 Tbsp. Cornstarch
  • 1 Tsp. Ground Cinnamon
  • 1 Tsp. Ground Nutmeg
  • 1/2 Tsp. Baking Soda
  • 1/2 Tsp. Salt
  • 1 C. Raisins

Instructions

  1. Preheat the oven to 350 degrees F. and lightly coat the inside of an 8" oven safe skillet with non-stick baking spray; set aside.
  2. Beat the 6 Tbsp. butter, 1/4 C. brown sugar blend, 1/4 C, sweetener, and 1/4 C. sugar together on a medium speed until well combined.
  3. Add in the egg and 2 Tsp. vanilla and beat again until smooth and creamy.
  4. Reduce the speed and beat in the 1 C. flour, 1/2 C. oats, 1 Tbsp. cornstarch, 1 Tsp. cinnamon, 1 Tsp. nutmeg, 1/2 Tsp. baking soda, and 1/2 Tsp. salt just until combined.
  5. Fold in the 1 C. raisins.
  6. Transfer the dough to the prepared skillet and smooth into an even layer.
  7. Place in the oven to bake for 25-30 minutes or until the edges are browning and the middle is set.
  8. Once done, remove from the oven and set aside to cool for about 15 minutes before slicing into 8 pieces to enjoy!
