A buttery puff pastry crust layered with eggs, bacon, and cheese to make for a delicious and easy breakfast option that everyone is sure to enjoy!

Ingredients

  • 1 Sheet of Puff Pastry, Thawed
  • 1 Tbsp. Butter
  • 4 Whole Large Eggs
  • 1/4 C. Unsweetened Almond Milk
  • 1 C. Shredded Reduced Fat Cheddar Cheese
  • 1/2 C. Cooked & Crumbled Bacon

Instructions

  1. Preheat the oven to 400 degrees F. and lightly coat a pie dish with non-stick spray.
  2. Press the 1 Sheet of Puff Pastry into the prepared pie dish and pierce the bottom with a fork a few times.
  3. Place in the oven to bake for 10-12 minute.
  4. While the puff pastry is baking, melt the butter in a skillet over medium heat.
  5. Beat the 4 Whole Large Eggs, 1/4 C. Unsweetened Almond Milk, and salt & pepper together in a medium bowl.
  6. Pour the eggs into the skillet and scramble until just set.
  7. Once done, remove the puff pastry from the oven. Use a spoon to flatten the bottom slightly.
  8. Sprinkle 1/4 C. of the cheese over the pastry, then top with the scrambled eggs, the remaining 3/4 C. cheese, and the 1/2 C. Cooked & Crumbled Bacon.
  9. Place in the oven to bake for 12-15 more minutes or until the cheese is melted and the pastry is golden brown.
  10. Once done, remove from the oven to slice and enjoy right away.
