Pumpkin Maple Salad Dressing is the perfect blend of autumnal flavors that transforms your greens into a vibrant, festive dish. Combining the creamy richness of pumpkin puree with the warm sweetness of maple syrup, this dressing is like a cozy hug for your salads.

A touch of apple cider vinegar adds a zesty kick, while a sprinkle of pumpkin pie spices evokes that classic fall magic. Drizzle it over a bed of mixed greens, roasted pecans, and dried cranberries for a salad that’s not only health-conscious but also an irresistible celebration of fall’s finest flavors!

I used this dressing with a simple fall inspired salad with a base of baby spinach that’s topped with roasted butternut squash, dried cranberries, pecans, and goat cheese. It was a super easy dish that is great as a lunch or even a side salad as part of a dinner.

Pumpkin Maple Salad Dressing is the perfect blend of autumnal flavors that transforms your greens into a vibrant, festive dish.

Ingredients

  • 1/2 C. Pumpkin Puree
  • 1/4 C. Apple Cider Vinegar
  • 1 Tbsp. Fresh Thyme, Rosemary or Sage
  • 2 Tbsp. Maple Syrup
  • 1/2 Tsp. Dijon
  • 1/4 Tsp. Pumpkin Pie Spice
  • 1 Garlic Clove
  • Pinch Crushed Red Pepper Flakes
  • Salt & Pepper to Taste
  • 1/2 C. Olive Oil

Instructions

  1. Place the 1/2 C. Pumpkin Puree, 1/4 C. Apple Cider Vinegar, 1 Tbsp. Fresh Thyme, Rosemary or Sage, 2 Tbsp. Maple Syrup, 1/2 Tsp. Dijon, 1/4 Tsp. Pumpkin Pie Spice, 1 Garlic Clove, Pinch Crushed Red Pepper Flakes, and Salt & Pepper to Taste into a blender, food processor, or cup for an immersion blender.
  2. Puree until smooth.
  3. Add in the 1/2 C. Olive Oil and blend once again.
  4. Once done, use right away or cover and store in the fridge until ready to enjoy or up to 3-5 days.
