Ingredients
- 1 Large Burrito Low-Carb Tortilla
- 3 Whole Large Eggs
- 1/4 C. Low Fat Cottage Cheese
- 2 Tbsp. Cooked & Chopped Low Sodium Center Cut Bacon
- 2 Tbsp. Whole Black Beans
- 1 C. Chopped Fresh Baby Spinach
- 1/4 C. Shredded Cheese (I used cheddar and pepper gouda.)
- Salt & Pepper to Taste
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of pie dish with non-stick spray.
- Place the 1 Large Burrito Low-Carb Tortilla into the bottom of the pie dish.
- Whisk the 3 Whole Large Eggs and 1/4 C. Low Fat Cottage Cheese together. Season with salt & pepper.
- Pour the egg mixture into the center of the tortilla in the pie dish.
- Sprinkle the 2 Tbsp. Cooked & Chopped Low Sodium Center Cut Bacon and 2 Tbsp. Whole Black Beans over the egg mixture.
- Top with the 1 C. Chopped Fresh Baby Spinach and 1/4 C. Shredded Cheese.
- Place the dish into the oven and allow it to bake for 30 minutes or until the eggs are cooked through and set and the cheese is melted.
- Once done, remove from the oven and allow to cool slightly before cutting into four pieces and enjoying right away.
