Everything Bagel Bowl

Everything bagels. ...Amirite? They are the stuff that dreams are made of. Seriously, I'm pretty sure that I dream about food. Everybody loves everything bagels. They're called 'everything' bagels because they are usually topped with, you guessed it, everything! Garlic, onion, poppy seeds, sesame seeds, and more.

I decided it was about time to turn the everything bagel into something that is, hm... more guilt free. Not to say that I would shy away from a bagel all the time, but most of the time I like to stick to something that's loaded up with a lot more fresh vegetables! That's why I created this ultimate everything bagel power bowl!

I've lovingly called this a 'power bowl' because it's full of power. Plant power. This bad boy is loaded up with baby greens, avocado, tomato, onion, capers, plenty of cottage cheese, and a whole lot of seasonings. The seasoning is where the magic is. It's adds not only flavor, but texture too!

What's better is that this bowl, while it has it's fair share of greens, doesn't need any dressing. Which is always one of those things of compromise for me. I'm one of those heavy handed dressing sorts, so for me to say that a 'salad' doesn't need dressing... is bold words, and not intended to be taken lightly. Except for when it comes to the waistline!

Everything in this salad has a purpose. ...Get what I did there...? Everything? Everything bagel bowl?! Bazinga! Really though, it does! Each flavor and texture work perfectly together to create the most amazing bagel bowl you'll ever dive face first into.

Okay, maybe not face first... but, you get what I'm saying by now. This bowl is amazing!

The Skinny:
Servings: 6 • Size: About 1 1/2 Cup • Calories: 177 • Fat: 7 g • Saturated Fat: 0.7 • Carb: 18.9 g • Fiber: 4 g • Protein: 9.7 g • Sugar: 5.8 g • Sodium: 625.1 mg

Ingredients:
Everything Seasoning:
1 Tbsp. Poppy Seeds
1 Tbsp. White Sesame Seeds
1 Tbsp. Black Sesame Seeds
1 Tsp. Dried Minced Onion
1 Tsp. Dried Minced Garlic
1/2 Tsp. Fennel Seed or Caraway Seed
Salt and Pepper to Taste

6 C. Baby Greens (I used spinach and kale.)
36 Cherry Tomatoes, Halved
1 1/2 C. Fat Free Cottage Cheese
1 Avocado, Sliced
6 Tbsp. Capers, Drained
24 Everything Bagel Chips
Red Onion (Optional)

Directions:

Combine the 1 Tbsp. Poppy Seeds, 1 1/2 Tsp. White Sesame Seeds, 1 1/2 Tsp. Black Sesame Seeds, 1 Tsp. Dried Onion, 1 Tsp. Dried Garlic, 1/2 Tsp. Sea Salt, and 1/2 Tsp. Fennel or Caraway together in a small bowl and mix until well blended.

Create each of your bowls with about 1 C. Baby Greens, 6 halved Cherry tomatoes, 1/4 C. Fat Free Cottage Cheese, 1 Tbsp. Capers, and 4 'everything' bagel chips. Toss on some bagel chips and red onion too if you would like!

Top each salad with about 1 1/2 Tsp. of the everything seasoning blend.

Enjoy right away!
