Biscuit & Gravy Pot Pie

Sometimes you just need a good comforting breakfast. And this Biscuit & Gravy Pot Pie is about as ‘comfort food’ as you can get. With a homemade turkey sausage gravy and biscuit topping, you just can’t go wrong! It’s perfect as a weekend breakfast or brunch. But, it also makes for a pretty good breakfast through the week since it reheats pretty well.

It’s lightened up just a bit by using a turkey breakfast sausage and also unsweetened almond milk in place of other milks. Though, you can really use any sort of milk that tickles your fancy. I just like this almond milk because it gives me more bang for my buck calorie wise.

The gravy itself for this pot pie is rather easy to make and is super tasty, and I’ve made a handful of gravy in the past. This one though is particularly good and also simple. If you aren’t a fan of turkey sausage, you could also use a reduced fat pork sausage or really any breakfast sausage that you do enjoy. You’ll just need to adjust the nutritional count accordingly.

Biscuit & Gravy Pot Pie

Biscuit & Gravy Pot Pie

A traditional sausage gravy topped off with biscuits and baked to perfection. Great for a weekend breakfast or brunch!

Ingredients

  • 1 Lb. Turkey Breakfast Sausage
  • 3 Tbsp. Butter
  • 1/4 C. Flour
  • 2 1/2 C. Unsweetened Almond Milk
  • 1 Tsp. Salt
  • 1/2 Tsp. Pepper
  • 12 Oz. Refrigerated Biscuits

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Cook the 1 Lb. sausage over a medium-high heat.
  3. Once done, drain and set the sausage aside.
  4. Melt the 3 Tbsp. butter in the same skillet previously used.
  5. Whisk in the 1/4 C. flour and cook for a minute or so to make the roux.
  6. Slowly whisk in the 2 1/2 C. milk and bring it to a simmer until thickened.
  7. Add the sausage back in and season with salt & pepper to taste.
  8. Remove from the heat and pour the gravy into a casserole dish.
  9. Cut the biscuits into 4-6 pieces and place them over the top of the gravy.
  10. Place the dish into the oven to bake for 30-45 minutes or until the biscuits are turning golden brown on top.
