If you live anywhere near the internet in 2026, you’ve probably seen the viral trend: the hack for the cloudlike cookie cheesecake fluff of Japanese cheesecake. The hack goes something like this — Whip up cottage cheese, or use greek yogurt, sweeten it, and stuff some cookies into it then let it sit overnight. The result? A soft and fluffy hit of convenience-sweetness upgraded with a luxe, soufflé-like texture.
As a lover of making guilty-pleasure food slightly less guilty, I dove in, tweaked, and tested until this snack went from fleeting TikTok fantasy to something you'd actually choose for breakfast (or a heavenly afternoon pick-me-up).
Why this works
Texture contrast is everything. The buttery crunch and syrupy filling of a Pop-Tart is the perfect foil for the light, airy crumb of Japanese cheesecake.
Strawberry is classic for a reason — bright, slightly tart fruit filling offsets the cheesecake’s sweet creaminess.
The "Japanese" cheesecake angle Japanese cheesecake (also called soufflé cheesecake) is feather-light, less sweet than classic New York-style cheesecake, and has a gentle tang from cream cheese and a hint of lemon. It’s typically baked in a water bath to create that wobbly, airy texture. For this hack I used greek yogurt, fresh fruit, and sugar free pudding.
